Papaya Couscous Summer Salad

Recipe
1/2 of a ripe papaya
1/2 cup prepared couscous (I used pearl couscous)
1 Persian cucumber
1 small tomato
1/4 avocado (or 1/2 if it is a small one)
Juice of 1 lemon
1/2 tbsp maple syrup
Fresh herbs (mint, basil, parsley or cilantro)
Salt and Pepper

Start by preparing the couscous. If you’re using pearl couscous, bring 1 cup of couscous with 1.5 cups of water to a boil and let it simmer for about 15 mins.
In the meantime scoop out the papaya with a spoon (or melon baller) and set the papaya bowl aside as your ‘serving dish’. Cut cucumber, tomato and avocado into small chunks.
Mix the lemon juice, maple syrup, salt and pepper and pour the dressing over the veggies/papaya. Once couscous has cooled slightly mix it in with the salad and herbs of your choice.
Serve it inside your papaya bowl and enjoy☀️
